Honey and Spice Cake

Continuing the recent cold weather themes I thought a little bit of baking may be in order. Gone now are the fruit cakes & light fluffy frills of summer, what was needed was something to have with a warm brew. Cue a bit of looking through the cookbooks & hey presto ‘Honey and Spice cake‘ was discovered. Flavoured with Honey, Cinnamon & Allspice, fairly simple to make & tasty as well (it reminded me of something Gran would make as a standby for unexpected guests). Carefully following the recipe still didn’t leave me with much confidence (it did say the final mixture was ‘a bit’ sloppy). As I poured the mix into a lined bread tin I was sure that I’d be left with an inedible brick, however just as the instructions said it all went to plan and produced a light sticky loaf which disappeared in short order as the family gathered like sharks. I’ve had to make another just to make sure it wasn’t a fluke!
